Hi! I hope you guys had an AMAZING Thanksgiving and spent some quality time with your friends and family. This was our first Holiday away from home, so it was full of new tradition. One of the things that wont ever change is how much we love leftovers! I KNOW. I talk all the time about how I just cannot eat leftovers but like…who doesn’t eat Thanksgiving leftovers, you have to be an alien or something.
Naturally, I needed to create something fun to do with them because eating them straight out of the container is frowned upon. I decided to smash everything into a quesadilla because – what’s one more carb? I even added some cheese – we only do this once a year people LIVE A LITTLE! It’s actually a pretty delicious combo. The turkey is in there, along with some cornbread stuffing, making it a little sweet and then I added the tangy cranberry sauce. All crisped up in a frying pan with some butter. How could you possibly go wrong? That’s correct – you CAN’T. The day after Thanksgiving is supposed to be full of more eating, lounging on the couch and maybe watching some movies. I might even like this day more than actual Thanksgiving, it’s more relaxing.
You can make your quesadilla with as many or as few layers as you want! If you’re trying to pack your entire previous nights dinner on there – I’m not mad about it. Here’s what I did: 1. Smash the stuffing and ‘spread’ it on half of the tortilla. 2. Spread cranberry sauce on the other half. 3. Layer turkey on top of the stuffing, followed by some shredded cheese. 3. Fold it all together – your cranberry will act as the glue to keep it all together! Melt some butter in a ban and crisp away!
