Gluten-Free Scallion Pancakes

I know I say this about a lot of recipes but this might actually be my favorite. I have always loved the flavors from the Asian culture and so does my entire family. That’s why you see a lot of it on my blog! When I’m in a pinch, it’s always my go-to. I always have coconut aminos, red thai chili paste and sesame oil in my fridge at any given moment. Oh and a ton of rice vinegar because I love everything vinegar too.

One thing I love when going into Chinatown in NYC is finding these scallion pancakes. They’re fresh, hot, crispy and full of flavor. I wanted to make these a little bit more friendly for me but also for you health conscious beauties out there. I made them gluten free and they basically only have 3 main ingredients: gluten free flour, water, scallions. It’s THAT easy. The traditional way of making these *I think* is making a dough, rolling it out, sprinkling scallions and then folding it up into a ball and flattening it out to fry. This sounded like a lot of work to me SO I skipped that part and went straight to the cooking process.

WHAT IS A SCALLION PANCAKE?

The savory pancake of your dreams. It’s thin and crispy and can be dipped in a delicious sauce, the base for your main course or a breakfast on the go.

HOW DO YOU EAT THEM?

My favorite way to eat a scallion pancake is by itself! Yep! It most definitely is all about the sauce though, I must say. There’s something about dipping something hot and crispy into a cool sauce, ya know?

WHAT IS A SCALLION?

Scallions are in the onion family. They’re long green rods – not to be confused with the smaller skinnier sister, chives. They have a mild onion flavor and are often used in Asian cooking as garnish and in tons of dishes.

These would be really fun to make if you’re having friends over or if you want to set out an appetizer. They’re easy to eat with your hands and light enough so you don’t get too full.

One of my favorite things to do is have theme nights so the whole entire meal is centered around that. You can have friends bring their own dishes and see what everyone comes up with!

These ones are gluten free, which is not traditional. I honestly just feel better when I avoid gluten. I definitely eat it and try all the things (mostly on weekends) because I live so close to NYC. During the week I try to stay gluten and dairy free because that’s what works best for ME. I wanted to eat these scallion pancakes without feeling like sh*t, ya know?

This recipe is extremely easy. You mix everything in a bowl and pour some of it onto a hot oiled pan, that’s it!

Gluten-Free Scallion Pancakes

Ingredients
  

Pancakes

  • 2 cups AP Gluten Free Flour I use the one from Trader Joes
  • 2 cups Water
  • 2 tsp Salt
  • 1 tsp Garlic Powder
  • 1/2 cup Scallions chopped
  • 1/4 cup olive oil for frying

Sauce

  • 1/2 cup Coconut Aminos
  • 1/4 cup Rice Vinegar
  • 1 tsp Red Chili Paste

Instructions
 

Pancakes

  • Combine all ingredients in a bowl and set aside.
  • Heat a medium frying pan on medium high heat with 2 tbs olive oil
  • Once pan is hot, spoon about 1/4 cup of mix into the oil. You might want to try just one alone first to see how much they spread out before you add others. Cook 3-5 minutes on each side. Drain on paper towel.

Sauce

  • Whisk together all ingredients. Add salt to taste, extra scallions and sesame seeds.

I definitely prefer homemade bacon jam but this stuff does the trick in a pinch! I also used havarti cheese but use what you like!
