Holy first blog post back after like two months! HI FRIENDS! I’ve missed sharing all of the fun recipes with you. For example, this plantain recipe i’m about to blow your mind with. I didn’t think I would miss writing (not the biggest fan) but I actually did. While there is a lot to catch up on, like what I’ve been doing, how my headache situation is panning out and how many great things I have in store for you – I really want to share this plantain recipe with you because it’s SO good!

If you love plantains as much as I do, then I KNOW you’ll be obsessed with this plantain recipe. Ready? Plantain Burgers with Roasted Garlic Chipotle Aioli. Yes, Yes, Yes. Out of control.  I’ve been buying plantains almost weekly now, sometimes I roast them, sometimes I slice them and throw them in a pan. Sometimes they’re green, sometimes I buy them black, the possibilities are endless you guys! I just love that they always add a little sweetness, no matter if you’re intending to make them sweet or if your plan was savory (I love a good, salty, plantain chip). I’m also such a sweet and salty girl. Rice, beans and plantains are my JAM and I could eat that every day of my life. Let’s get into it!

Plantain Recipe: What is a Plantain Burger?

I’m sure most of you have seen the burgers that have tostones as the buns, right? I really wanted to make something different than that. I wanted the plantain recipe to be the star of the show!

How Do You Cook Plantain Burgers?

Similar to your regualar beef burgers, plantain burger patties also enjoy a nice, greased, hot pan. I recommend using a non-stick, but if you don’t have a non-stick (like me) just be a little extra generous with your oil or butter situation.

This is the perfect meal for your meatless Monday and it can easily be made vegan with just a few little swaps. The plantain burger is filled with the glorious flavors of onion and garlic, while the roasted garlic chipotle aioli adds a smokey kick. I cooked the ‘burgers’ in a saute pan on medium high heat to really get some crispy crunchy color on the outside.

Plantain Burger with Roasted Garlic Chipotle Aioli

These plantain burgers will take your tastebuds to the next level. Perfect for any weeknight meal or meatless Monday!

Plantain Burger Patty

  • 1 1/2 Sweet Plantains black on the outside
  • 1/4 cup Onion diced
  • 1 tbs Chives chopped
  • 1 Egg
  • 1 tsp Sea Salt
  • Black Pepper to taste

Roasted Garlic Chipotle Aioli

  • 1 Head of Garlic
  • 1/4 cup Chipotle Mayo I love Sir Kensington's
  • 1 Tbs Olive Oil


  • 3 Teeny Tiny Avocados (Trader Joes) or 2 Regular Size
  • 1 Lime juiced
  • 2 tsp Sea Salt
  • 4 Lettuce Cups Bibb works best


Roasted Garlic Chipotle Aioli

  • Cut the end off of the garlic bulb so the cloves inside are exposed. Place the bulb in foil and drizzle olive oil (you can even sprinkle some sea salt on here) and place in a 350°F oven for 20 minute or garlic is brown and soft.
  • Once garlic is done, squeeze it out into your chipotle mayo. You can either blend this in a blender or use a fork to mash the garlic and combine.

Plantain Burger

  • Peel the plantains and place it in a medium size sauce pan. Cover with water and boil for 10-15 minutes or until soft
  • Strain water from the pot and add the softened plantain to the bowl of a food processor along with onion, chives, salt, and pepper. Blend until smooth then add egg and blend until combined.
  • Using about 2 tbs of the mixture form 4 patties.
  • In a frying pan on medium, high heat add 1-2 tbs of olive oil and begin placing your patties in the pan for about 2-3 min on each side
  • Drain on a paper towel and sprinkle some salt once they come out


  • Place each patty on a lettuce cup, top with roasted garlic chipotle aioli, avocado slices and some tajin if you're feelin' spicy – enjoy!
