Don’t Go Bacon My Heart
One thing everyone loves around the holidays is bacon. We try to find every way possible to incorporate it into every single one of our dishes. Mostly because it makes everything BETTER! Can I get an amen on that one? The only thing I love more than bacon during the holidays is giving people gifts that they can eat. This bacon onion jam is the best gift to give! You can wrap it up in cute jars and add it to a gift basket or throw on a handwritten tag and give it as a parting gift. It’s sweet, salty, tangy and will leave you wanting more. Not to mention, it’s probably one of the easiest things I’ve ever made. I could totally just eat it with a spoon but if you’re trying to be a proper human you can eat it on toast, or as a topping on a burger or hot dog. It would also make a fun accompaniment to a cheese board or bruschetta bar. I’ve even used it in an easy hors d’ouevre. Using store bought phillo cups, a piece of Havarti cheese in each cup, top with bacon jam and pop in the oven until warmed through. BAM! Now you have an easy snack to make for one of your holiday parties this year!
Cook until crispy and drain on a paper towel
Reserve 1 TBS of bacon grease. Add chopped onion, bacon and brown sugar.
Move heat to low and cover. Let cook for around two hours until it’s really brown and gooey. I ended up transferring my mix to a cast iron skillet once it shrunk down enough. I just feel like there’s more of a chance for it to get extra brown and delicious in the cast iron!
