I have a confession to make – before this recipe I had never made chocolate crinkle cookies before. In fact – I had never even thought twice about them before I polled my audience on IG and it was the #1 cookie. I decided to come up with a healthy and chocolate crinkle cookie recipe to kick off the holiday season.

How to make Healthy Easy Chocolate Crinkle Cookies

  1. Combine

    coconut oil, coconut sugar and eggs first as these are things you don’t want chunks of in your cookies!

How to Make Cookies Crinkle

  1. There are a few methodologies to this – one way is to roll cookie dough balls in granulated sugar and then powdered sugar before putting them in the oven.
  2. This chocolate crinkle cookie recipe is, of course, the easier way – which is just one sugar. It works just as well!

What is a Crinkle Cookie?

Think of a cross between a brownie and a cookie. When I first tasted the batter I was blown away because it’s basically brownie batter. It’s a little bit thicker – hence it becoming a cookie and not a brownie, but equally delicious.

How Long Do These Chocolate Crinkle Cookies Last?

It depends on the house you’re living in… no just kidding! They’ll last about 2 weeks in the fridge or 1 month in the freezer. Although, I doubt they’ll last that long at all, they’re so good!

Healthy-ish Chocolate Crinkle Cookies

Ingredients
  

  • 1/4 cup coconut oil
  • 1 cups coconut sugar
  • 2 large eggs
  • 1 teaspoons pure vanilla extract
  • 1 cups gluten free all-purpose flour
  • 1/2 cup unsweetened cocoa
  • 1 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 cup powdered sugar

Instructions
 

  • Preheat oven to 350° F
  • In a medium sized bowl combine egg, coconut sugar, vanilla and coconut oil
  • Add remaining ingredients except for confectioners sugar
  • *optional* chill dough for 10-30 minutes
  • Using a small ice cream scoop or 1 tablespoon, roll dough into balls and set aside
  • In a small bowl add powdered sugar, roll each ball and then place on a baking sheet (press down slightly)
  • Bake 12 Minutes

- @sietefoods salt & vin chips
- brown rice pasta (Trader Joe’s), homemade red pepper tomato sauce and chicken

Spicy Mango Mocktail: 
- 2oz @seedlipdrinks grove 42
- 2oz @traderjoes Spicy Mango Lemonade
- juice of 1 lime

honestly I’m not sure why I haven’t shared thi honestly I’m not sure why I haven’t shared this before! My mom has been making it for a few years and it’s so. good. 😩

deets 👇🏼 
- cut and dice about a half of a watermelon (you want like two cups once it’s diced) and add to a bowl
- finely dice 1/4 cup pickled jalapeños (I love the sweet & hot from Trader Joe’s) add to the bowl
- finely dice 1/4 of a red onion * if you don’t want the flavor to be too strong, soak them in some water for a few min
- sprinkle with salt and juice of 1 lime
