Happy Holidays! We’re only like two weeks-ish away from Christmas – LIKE HOW?! Where the hell does the time go?! Kevin and I have been in NJ for almost two months already, WHAT?! So crazy. However, this means that I’m busting out all of the festive recipes. One of my favorite combinations to eat every year is peppermint and chocolate. I can hear my NY jew grandma now “bleh that tastes like toothpaste.” I can totally see that for some people but I’m so into it! Also, let me tell you something – Nielsen Massey Vanillas has the BEST extracts ever. I also only eat it at this time of year so LIVE A LITTLE YO.Anyway, this recipe that I made for you might be the easiest thing I’ve ever made. You know I love a good Nutribullet recipe, lolz. That’s right, I made these babies just by mixing everything in my Nutribullet. Okay I had to heat up some milk too, but that’s it! How crazy is that? Then you just pour them in your containers of choice and put them in the fridge to set. Easy Peasy. They’re also a showstopper because everyone will think you spent so much time on this amazing dessert. The holiday parties are coming up and this is something you can totally make a day or two ahead and have ready to go in the fridge – it doesn’t get better than that!

Ok enough of me rambling, let’s get down to it shall we? I hope you’ll try these! They’re too easy NOT to.

By the way – the little glasses are linked here, they’re from West Elm and I’m SO obsessed with them. I use them for wine, water, snacks, chocolate pot de crème – everything. They’re also super trendy, because they came from my super trendy bff Christin as a housewarming gift– thanks boo!

Chocolate Peppermint Pot de Creme
Ingredients
- 5 oz 60% Chocolate
- 2 Eggs
- 2 tbs Maple Syrup
- 1/2 tsp Nielsen Massey Peppermint Extract
- 3/4 cup Coconut Milk
- 1 tsp Nielsen Massey Madagascar Vanilla
Instructions
- Pour all ingredients EXCEPT for coconut milk into a blender, or in my case – Nutribullet and BLEND until smooth.
- In the meantime warm the coconut milk on the stove or in the microwave just until warm
- Add coconut milk to your blender and blend until smooth
- Divide amongst 4 ramekins, cups or anything you have and set in the fridge for atleast 1 hour!
