Simple Lunches

Simple lunches are so important to me. When I'm in the zone working at my computer, the last thing I want to do is get up to make a lunch. I typically like to have everything prepped how I do in The Alternative Guide to Meal Prep.

This makes it so easy to just throw together a bowl and keep it moving. All of the lunch recipes in this section are just like that. They can be prepared on the day of or they can be prepared in their separate parts prior to. For example my Caesar Pasta Salad is such a winner in my book and everything can be prepped before hand (or not).

I do like having a full lunch. The middle of the day is when I think we need most of our energy, so healthy nourishing food is the way to go. This will help you make it through the rest of your day without feeling groggy and like you want to take a nap.

These simple lunches are so customizable. If there are things you like more or less of, you can totally adapt to that. For example, in the Cuban Nourish Bowl, I LOVE the crispy plantains, so I always throw in a few extra. Once you start getting the hang of actually being prepared, lunch is such a breeze, you guys. It can be thrown together in 5 minutes or less.
