Did anyone else grow up on sandwiches? My mom packed pb&j’s, cold cuts and cheese basically any time we were traveling anywhere (including Disney). My sister and I grew up playing travel sports so we were always on the road and saving money was a must! As I grew older, these sandwiches became more and more of a comfort food. Sometimes I CRAVE a pb&j. As I started to become more conscious of what I was putting in my body, gluten was one of the things I limited in my diet. It has a way of making me feel headachy. I am someone that is on the go a lot. I spend a lot of time in my car, running errands and not necessarily sitting down at a table for all of my meals. I’m pretty sure your wellness should come before anything and anyone else on this entire planet. You should love yourself enough to feed your body GOOD THINGS! A lot of the time gluten free bread meant not as tasty. This is SO not the case here – and the bread slices are 30% larger, mirroring a conventional sandwich bread, leaving you zero excuses not to be ready for the day ahead!
This sandwich recipe is something that feels comfortable yet elevated to me. Something that you can easily make and run out the door, or pre-make and snag it out of the fridge in the morning. This recipe came from something I really like eating with Kevin’s family, because he’s German and the German breakfast is just everything I love in life – cheese, jams, breads and meats. How could you go wrong?! Throw in a cup of coffee and you’re set for the day. In other news, I decided to combine all of these things into one delicious sandwich. One of my favorite flavor of jams is raspberry. Nothing beats the combo of any cheese and raspberry jam for me. In this case I decided to go ahead with some brie cheese because it adds such a creamy texture and mild bite. The sliced chicken makes it a meal for me, it adds the sustenance I need but can easily be made without it. Another fun option would be to make it a grilled sandwich as well. Put the whole thing together and cook it in a sauté pan pressing it down on each side using another pan or a spatula.
