A Peach Twist on a PB&J That Will Blow Your Mind

HAPPY SUMMER YOU PRETTY PEACHES!

If you haven’t guessed, this post is about one of my favorite summer fruits. Peaches are so versatile, you can throw them on the grill, freeze them & add into a smoothie, make a pie – the possibilities are endless!

Since I live in Florida and it is rather toasty in the summer I turned to my go to – ice cream. I mean, is it even summer if you’re not eating ice cream?! I mixed all of your favorite flavors of a peach crumble and turned it into the most decadent PB&J EVER. If you’re ready for your mind to be blown KEEP READING.

I made the streusel topping using softened butter, sugar, salt and flour. Once you bake it in the oven it becomes a sweet and bubbly bark-like consistency. Once it’s cooled – feel free to take out all of your anger and smash it into little pieces. Now, if we’re being honest – I totally could just eat this in a giant bowl … on my couch. Since i’m feeling generous today, I went ahead and swirled it into my ice cream along with the peaches.

Side note: you can definitely roast the peaches with some brown sugar and cinnamon before you put them in the ice cream — just make sure they are completely cooled first.

A Peach Twist on a PB&J That Will Blow Your Mind

Ingredients

    ICE CREAM
  • 2 C Whole Milk
  • 2 C Heave Cream
  • 1 C Granulated Sugar
  • 2 TSP Vanilla Extract
  • 2 Peaches Diced
  • Pinch of Salt
  • STREUSEL
  • 6 TBS Unsalted Butter (softened)
  • 1/2 C Brown or Granulated Sugar
  • 1 1/2 C AP Flour
  • 2 TSP Cinnamon
  • Pinch of Salt
  • COOKIES
  • 1 C Peanut Butter (crunchy or smooth)
  • 1 C Granulated Sugar
  • 1 Egg

Instructions

    ICE CREAM
  1. Mix all ingredients (except for peaches and streusel) in a sauce pan heated to medium
  2. Stir until sugar has dissolved *do not let milk boil!
  3. Cool this mixture and set aside (TIP: If you're impatient -- Place mixture in a stainless steal bowl and place this bowl into another bowl filled with ice water. Stir constantly)
  4. Place cooled mixture into your ice cream maker, add in streusel and peach pieces
  5. Freeze using manufacturer instructions
  6. If using the kitchen aid attachment, place on 'stir' for 20 minutes and then move to a container and freeze
  7. STREUSEL
  8. Preheat oven to 350 degrees F
  9. Mix all ingredients until it is well incorporated
  10. Spread on a cookie sheet and put in the oven for 10-15 minutes until mix is brown!
  11. Let mixture cool and then break into bite size pieces
  12. COOKIES
  13. Preheat oven to 350 degrees F
  14. Mix all ingredients together in a bowl
  15. Use a tablespoon or two for each cookie
  16. Bake 10 minutes or until the bottoms are golden brown
  17. FREEZE THEM
  18. PUT IT ALL TOGETHER
  19. Place one scoop of ice cream on 6 frozen cookies and sandwich with the other half!
  20. Freeze these again if you have time -- they'll stay together better
