Macy’s Culinary Council Cooking Demo with Chef Josh Capon

My passion of food started at a young age. I’ve always been immediately attracted to anything having to do with recipes, menu planning, food styling, or funky food fusions. I am constantly craving more knowledge to make me better at what I do. So, whenever I get a chance to see a pro in their ‘natural habitat’ I take it. It’s always fun to learn some new recipes, but it’s nice to see how it’s done from a pro and the techniques they love to use.

The next live cooking demo is in Miami at Macy’s Dadeland January 20th, at 2:00 PM. Chef Josh Capon, who happens to be the owner of one of our beloved Miami restaurants, Lure Fish Bar will be sharing some of his culinary secrets and favorite recipes all while you sit back, relax, sip and taste!

In honor of the Chef Josh Capon and the up coming demo, I’m bringing you one of his recipes to try out! His famous Pico De Gallo Guacamole, the big super bowl game day is around the corner you know! Josh Capon's Guacamole/Pico de Gallo

Ingredients

  • 1 C Chopped Tomato
  • 1 C Chipped Red Onion
  • 1/4 C Chopped Cilantro
  • 1 Chopped Jalapeno (no seeds)
  • Juice of 1 Lemon
  • Juice of 1 Lime
  • 4 Ripe Avocados

Instructions

  1. Mix all ingredients together except for the avocado. Season with salt and pepper. This is your Pico de gallo, a raw tomato salsa. When ready to serve, cut the avocado in half, remove the seed and scoop the flesh out with a spoon. Mash with a fork. Combine salsa with the mashed avocado and season to taste.
  2. Serve with crispy tortilla chips, in my case sweet potato chips or soft corn tortillas.
